This is my go to meal when I am tired and very hungry. It literally takes only minutes to assemble and tastes great!
1-lb. pkg. Trader Joe’s Harvest Grains Blend
2 cups water
1 t. onion powder
2 large cloves garlic, minced
½ pkg. frozen corn
10.5 oz. container grape tomatoes, halved
½ t. dried basil
Sweet mini peppers, cut in strips
Salt & Pepper to taste
Prepare Trader Joe’s Harvest Grains Blend with 2 cups water, onion powder, 1 clove minced garlic and frozen corn.
While the grains are cooking mix grape tomatoes, dried basil and salt & pepper together.
Using a pasta bowl place grains in center of dish, place a nice size spoonful of tomatoes in center then arrange mini sweet peppers around dish.
