It’s easy to grill portabella mushrooms. Adding stuffing brings it to a whole new level.
4 Portabella Mushrooms
Fat free balsamic vinaigrette
Topping Ingredients:
2 large tomatoes
1 t. dried basil
1 large clove garlic
½ t. salt
Stuffing Ingredients:
2 cans cannellini beans drained and rinsed
1 clove garlic
4 – 6 T. fresh lemon
1 t. oregano
½ t. salt
1 small handful of fresh parsley
Prepare Stuffing:
In food processor mix all ingredients until smooth. Taste and adjust seasonings. If mixture is too dry, add 1 or 2 T. of water.
Prepare Topping:
Dice tomatoes; add basil, garlic and salt. Set aside.
Clean portabella mushrooms. Wipe mushrooms clean and scrape out insides. Grill mushrooms and baste with balsamic vinaigrette. Usually four minutes on each side is good.
Stuff mushroom with filling and top with tomato topping.
